Carrying On Family Traditions
Maile’s culinary journey began at home, inspired by her family’s traditional Lao, Thai, and French cooking. Gathered around the table sharing sticky rice, fresh papaya salads, and fragrant herbs like lemongrass, mint, and basil, she developed a deep love for bold flavors and communal dining.
Her career flourished at Thai Chef in Lahaina, Mekong Thai Restaurant, Paesano Ristorante Italiano in Mānoa, and later as Managing Partner at Assaggio Ristorante Italiano in Hawaiʻi Kai, where she began blending Asian spices with Italian influences.
In 2008, Maile opened Maile’s Thai Bistro in Hawaiʻi Kai, followed by a second location at Ward Center in 2017. Her cuisine reflects a vibrant fusion of Thai and Laotian traditions infused with Hawaiʻi’s local culture fresh, flavorful, and thoughtfully crafted.
As owner and executive chef, Maile remains dedicated to honoring her heritage while creating exceptional dining experiences for her community.
